Roast Beef Recipe

Roasting meat in a pizza oven is so easy! This Roast Beef Recipe is so simple and if you are using a wood fired pizza oven, you will get that delicious food fired flavour.

Ingredients

  • 1.5–2 kg (3–4 lb) beef roast
  • 2 tbsp olive oil
  • 2–3 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp coarse salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika (optional)

Method

Prepare the Roast:

  • Remove the beef from the refrigerator and let it come to room temperature for 30 minutes.
  • In a bowl, mix the olive oil, garlic, rosemary, thyme, salt, pepper, and smoked paprika. Then you will need to rub this mixture all over the beef.

Preheat your Pizza Oven:

  • Fire up your pizza oven to it’s optimal temperature. Then allow your pizza oven temperature to drop to 200°C–230°C (400°F–450°F). Use an infrared digital thermometer if your pizza oven doesn’t have a built-in one.
  • If using a wood-fired oven, ensure the fire is well-established but not too intense, creating a balanced heat.

Roast the Beef:

  • Place the roast in roasting pan or a cast iron skillet.
  • Then Place the pan into the pizza oven. Rotate the every 10 to 15 minutes to ensure even cooking, as pizza ovens can have hot spots.

Roast the beef until it reaches your desired level of doneness:

  • Rare: 48°C–52°C (118°F–125°F)
  • Medium-Rare: 52°C–57°C (125°F–135°F)
  • Medium: 60°C–65°C (140°F–150°F)

Rest the Beef:

  • Remove the roast from your pizza oven and cover it loosely with aluminium foil. Let it rest for 20 minutes to allow the juices to redistribute.

Carve & Serve:

  • Slice the roast against the grain into thin slices. Serve with roasted vegetables and your favourite sauce, such as horseradish cream or gravy.

Top Tips

  • Temperature Monitoring: Pizza ovens can have fluctuating temperatures. Use a meat thermometer and check the pizza oven’s heat regularly.
  • Wood Choice: If using a wood-fired pizza oven, hardwoods like oak or hickory work best for a rich, smoky flavour.
